- 3/4 cup oats
- 1 cup flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 stick of butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 1/2 tsp vanilla
- 1/3 cup peanut butter
- 1 egg
- 6 oz or 3/4 cup chocolate chips
- Cream together butter and sugars.
- Add vanilla and peanut butter. Mix.
- Add egg. Mix
- Add dry ingredients. Mix carefully, lest you cause a flour explosion.
- Stir in chocolate chips.
- Chill in fridge for 2+ hours or in freezer 30 minutes. Dough will keep up to 2 weeks.
- Create reasonably sized dough balls and bake at 325 degrees for 12 - 15 minutes.
- Cool on cookie sheet for 2 minutes; move to rack and cool another 2 minutes. (Alternately, throw caution to the wind and eat immediately.)
